Routine demand and occasional peaks

Review sales by weekday, season and occasion. One strong weekend should not become the normal restocking target. Separate recurring patterns from one-off events and record local changes such as holidays or a closed entrance. These factors can affect results more than the season itself. Keeping context beside sales figures helps you avoid adjusting the range in response to the wrong cause

Measuring assortment changes

When changing colours, sizes or price levels, track write-offs as well as sales. More stock may raise turnover while also leaving more flowers unsold. Make manageable changes and record their dates.
